The auspicious day of White Dew (September 8th) marks the beginning of this year's hickory nut harvest season, a beloved snack among Hangzhou residents. Approximately two weeks after harvesting, the freshly gathered nuts will make their way to the market.

Known for their round shape, thin shells, and rich, crunchy kernels, hickory nuts from Lin'an district have gained international recognition for their exceptional taste. With nearly 600,000 acres of hickory nut orchards, Lin'an is a major hickory nut production area, employing around 150,000 locals in its cultivation, processing, and sales. The history of hickory nut processing in Lin'an spans an impressive 500 years, with techniques passed down through generations.

The hickory nut processing procedure involves 18 intricate steps, including large kernel selection, three-day sun-drying, manual husk removal, and hand-roasting. Each nut undergoes a comprehensive transformation from a simple nut to a crispy, flavorful treat. In recognition of its cultural significance, Lin'an's hickory nut processing technique has been included in the sixth batch of provincial-level intangible cultural heritage representative projects.

Despite technological advancements, the art of hickory nut cracking remains a hands-on endeavor. Craftsmen rely on experience, carefully modulating their force and direction during the tapping process to keep the pulp intact while removing the husk. Tools are used to carefully extract the inner shell, which demands patience and meticulousness as even a slight tremor could undo the effort. However, a seasoned craftsman can remove the shell and extract the whole walnut kernel in just one minute.

As the White Dew festival unfolds, Hangzhou residents are anticipating the arrival of the freshly harvested hickory nuts, not only for their scrumptious flavor but also the centuries-old craftsmanship that transforms these nuts into cherished culinary treasures.
